The very close relative of melting moments, we’ve got YoYos! What sets them apart is that melting moments are made with cornflour, while yoyos are made with custard powder! Oooo indulgent, yes.

You can change the filling to whatever flavour you like, whether it’d be lemon, strawberry, even orange – endless possibilities! I just really happen to like passionfruit.



Passionfruit YoYo cookies

Ingredients
  

Cookies

  • 185 g unsalted butter softened
  • 90 g icing sugar
  • 1 tsp vanilla bean paste
  • 235 g flour
  • 50 g custard powder

Passionfruit filling

  • 90 g icing sugar
  • 30 g unsalted butter softened
  • 10 g custard powder
  • 1 tsp vanilla bean paste
  • passionfruit syrup with pulp

Instructions
 

Cookies

  • Preheat oven to 170°C. Line a flat sheet tray with baking paper, set aside.
  • Beat the butter, icing sugar, and vanilla in a stand mixer with a paddle, until pale and creamy.
    Combine flour and custard powder and add into the butter mixture. Mix until the sides of the bowl are clean and a soft dough forms.
  • Weigh 25g cookies and roll them into a ball then place onto the sheet tray with approximately 3 inch distance in between each cookie.
    Grab a fork and flatten each cookie lightly. It's okay if there are cracks when you flatten them. Bake the cookies for 15-20 minutes. Check after 15 minutes, you don't want them to colour as much. Let the cookies cool completely and prepare the filling.

Filling

  • Beat all ingredients but the passionfruit syrup in a stand mixer with a paddle until it is light and creamy. Add the passionfruit syrup as much or as little as you want, I added around about 4 tablespoons of the syrup.

Assembly

  • Divide the cookies in half. Fill half of the cookies with about a teaspoon of filling in the middle and press lightly with the other half until you see the filling spread itself. Serve with a cup of tea or coffee.
    For me it's always going to be coffee but you do you 🙂
